Champagne Piollot 'Champs Rayés' Brut Nature, Base 2017 allagash Aligoté is still enjoyed atThis is 100% Chardonnay. Champs Rays means 'Striped Field' and refers to the two veins of marly clay soil that run through the vineyard. The juice gets aged in oak barrels and sits on the lees for a whopping 6 years prior to release. It is incredibly dry and textured with wonderful expressive aromas of honeyed brioche. We would enjoy this with oyster crudo with a Champagne mignonette: In a small bowl, combine lemon juice, peppercorns, and shallots.
